The pesto is made the old-fashioned way — hand-ground in a mortar and pestle using fresh basil leaves, walnuts, vegan cheese, cracked black pepper, garlic, Himalayan pink salt, and a drizzle of olive oil. This slow, mindful method creates a textured, aromatic pesto that’s vibrant, nutty, and beautifully bold. Generously layered between sheets of our millet sourdough dough — crafted with jowar (sorghum) flour, our natural sourdough starter, cold-pressed sunflower oil, and Himalayan pink salt — the loaf is carefully twisted and twirled to create delicate swirls of green running through every slice. The result is a stunning fusion of earthy millet bread and rustic basil pesto, bringing depth, character, and a completely new dimension to babka.
