Rustic Millet Sourdough A timeless European tradition — thoughtfully reimagined with ancient millets. Our Rustic Millet Sourdough is crafted in the classic European style, yet made entirely with wholesome sorghum (jowar) flour. Naturally leavened with our in-house sourdough starter, seasoned only with Himalayan pink salt, and made with absolutely no added fats, this loaf is purity at its finest. Each batch undergoes a slow fermentation of 48 to 72 hours, depending on the weather, allowing deep flavor development, improved digestibility, and a beautifully complex crumb. The dough is then baked in a traditional Dutch oven — a heavy cast iron pot that traps steam and creates that signature crisp, crackled crust with a soft, airy interior. The result is a hearty, earthy, deeply aromatic sourdough with a rustic soul and nourishing character. Perfect torn by hand, toasted with a drizzle of olive oil, or paired simply with soup, cheese, or fresh spreads — this is bread in its most honest, elemental form.
